5 AVOCADO RECEIPES FOR EVERY MEAL

If you love avocado as much as we do, you’re always looking for ways to use it. Enjoy these 5 avocado recipes for breakfast, lunch, dinner, and more!!!

Avocados are a stone fruit with a creamy texture that grow in warm climates. Their potential health benefits include improving digestion, decreasing risk of depression, and protection against cancer.

  1. Broccoli Pesto Quinoa Salad
Blanched some beautiful broccolini and tossed my quinoa with kale, fresh mint, roasted chickpeas, avocado, and my favorite part – crisp, pink slices of watermelon radish. If you can’t find watermelon radishes, thinly sliced red radishes will provide the same crisp bite. And if you can’t find broccolini, regular broccoli will work just fine.
Simply dress everything in lemon and olive oil and then finish the salad with big dollops of my favorite lemony pea pesto.

  1.  Broiled Parmesan avocado
Since the most popular way to eat avocado is to dig into ’em as is, you might not know that the healthy fat actually tastes delicious cooked. For a savory breakfast or healthy snack, switch things up and broil your avocado in the oven or toaster oven. Topped with cheese and a little lime juice, it’s perfection.

  1.  Thyme chicken and roasted red pepper hummus stuffed avocado
This recipe combines avocado with another tried-and-true healthy food fave: hummus. But don’t be fooled; this is not your average hummus. Thyme-seasoned chicken, shiitake mushrooms, and onion make these stuffed avocados more than a snack, turning ’em into a full-blown, delicious meal.
  1.  Get the recipe: Crispy baked avocado fries
These avocado fries will have you licking every last breadcrumb off your fingers—they’re that good. The creaminess of the avocado combined with a crunchy breadcrumb coating creates a perfect balance. Enjoy them as is or dipped in  aioli sauce.
  1. Get the recipe: Avocado deviled eggs
The healthy fats from the avocado and the protein from the eggs make this a delicious and filling snack. Besides the egg and avocado, all you need is tomato, onion, cilantro, and hot sauce—if you like some heat.
