5 AVOCADO RECEIPES FOR EVERY MEAL

Avocados are a stone fruit with a creamy texture that grow in warm climates. Their potential health benefits include improving digestion, decreasing risk of depression, and protection against cancer.
 
  1. Broccoli Pesto Quinoa Salad
Blanched some beautiful broccolini and tossed my quinoa with kale, fresh mint, roasted chickpeas, avocado, and my favorite part – crisp, pink slices of watermelon radish. If you can’t find watermelon radishes, thinly sliced red radishes will provide the same crisp bite. And if you can’t find broccolini, regular broccoli will work just fine.
Simply dress everything in lemon and olive oil and then finish the salad with big dollops of my favorite lemony pea pesto.

Since the most popular way to eat avocado is to dig into ’em as is, you might not know that the healthy fat actually tastes delicious cooked. For a savory breakfast or healthy snack, switch things up and broil your avocado in the oven or toaster oven. Topped with cheese and a little lime juice, it’s perfection.

This recipe combines avocado with another tried-and-true healthy food fave: hummus. But don’t be fooled; this is not your average hummus. Thyme-seasoned chicken, shiitake mushrooms, and onion make these stuffed avocados more than a snack, turning ’em into a full-blown, delicious meal.
